SPICY ADVICE at The General Cemetery






This is a super immersive in depth exploration into flavour, giving you time to really focus on what you experience while tasting and how to use all your senses to develop a really playful intuitive approach to cooking and combining ingredients.

We begin by doing some taste experiments used by food development labs to tune our tasting skills and start a dialogue with our senses.

Then we will be inviting folks to experience a whole library of spices, herbs and many fermented foods. We will share our reactions and descriptions as we go, each building up our own personal flavour vocabulary to create a map of dream combos. We will talk memories, recipes, and organising principles. And discuss foraging and the seasons in relation to different methods of preserving and connection to local green spaces.

Next is the music round - we'll taste with our ears and follow our noses to assign textures and flavours to three songs. Then we will talk fermentation basics, the science, the do's and don'ts, troubleshooting q&a's, and how to use your krauts in your cooking. Finally you will choose the song that tickled your taste buds best and use it to design a kraut that you'll make and take home.

This workshop is suitable for beginners and seasoned pros alike. Expect to be well fed with lots of tasty combos to to soak up the pickles and workshop Jars provided. There is a licensed bar available at the space too.

  • Get to know your spices - A talk on origin stories and developing our descriptive vocabulary for tasting and recognising flavours.

  • Is it a Combo!? Tasting board of our favourite pairings, communal dialogue on why things work or not together.

  • Fermentation playground - How flavours change via alchemy of fermentation. Science part and Basic fermentation rules, question time.

  • Music round - Kraut rock time, listen to music and use your descriptors to design a music themed kraut.

  • Aftercare and appetizers - How you can apply kraut to every meal.
